Developed concurrently with the Valkyrie Class Destroyer, the Saladin Class was favored by Starfleet as it was seen as a less complex design with only a minimal sacrifice in functionality. In later years this decision has come into question as, while the Saladin Class has served with distinction, overall it has been found somewhat lacking in engine power and maneuverability. These issues were not as prominent in the few Valkyrie Class Destroyers that made it into service.

Behind the Scenes Notes
The Saladin Class is not an original design to Yotsuya's Shipyard, and is included to provide context as it is mentioned in the description of other classes included here.
The Saladin Class was designed by Franz Joseph for his non-canon book, Star Fleet Technical Manuel. However, the class is considered canon due to elements from Joseph's book being used during the production of the first few Star Trek films, when they mined the book for details to include in com chatter and on background displays.
The only ship officially identified as part of this class on Memory Alpha is an unnamed NCC-500, although two apocryphal ships from novels (NCC-424 Pompeii and NCC-530 Cochise) are also mentioned. For the rest of the ships listed above, names were gathered from the non-canon Trek wiki, Memory Beta.
Left off from Memory Beta's list was U.S.S. Jenghiz, as she shared a registry number (NCC-501) with the Atares, a canon ship. Also, while Memory Beta's list went up to NCC-555, the list above stops with NCC-530 (the highest number mentioned on Memory Alpha) so as not to overlap with registry numbers found in this website's Paddington Class.
Which ships were marked as "lost" in the list above was somewhat arbitrary, with some preference given to names that Memory Beta noted as being repeated on later ships. Also, the Pompeii is marked lost as it was destroyed in the novel in which it was featured.
